Brown your meat. I use a 2 pound mix of andouille and tasso. Remove and set aside.

Cook down Trinity. Add the meat back with the beans and 1 or 2 ham hocks. Cover with water. I use the meat setting for at least an hour, usually close to 2. Bean setting never cooks them right in my experience.

Open up and season to taste as needed. Remove about a cup of beans and smash them up and return. Add some vinegar too.

1 lb of sausage, 4 cans of creamy Blue Runner and a little parsley to make it look pretty. No one will know the difference.

I tried with the pressure cooker and I can't mimic what I do on the stove.

Report back what you did with the results.

Dont do Jody's recipe. Its garbage

I still soak the beans.
Use saute function to cook down trinity.
Add beans and bay leaves.
Cover with liquid. (Stock or water) Leave about an inch of liquid over the beans.
Set pressure cooker for 1 hour. Manually release when done.
Add sausage/ salt/ creole seasoning to taste. Done.

Camellia has a recipe on their website that I use. They're perfect everytime I cook them. I don't think I can eat red beans any other way now.

It's wonderful.

But...if you just throw everything in at once...set it for 50 minutes...and finish like in the video.

You won't get any better. But make sure you have Winn Dixie Hickory Sweet bacon.

If you made the video 4 minutes instead of 14 people might watch. I’m not watching any cooking video that long. And get a tripod or a drink. You are like shaky Pete.
