Fresh Market in Lafayette was out of it for a long time and then recently I was told they were not carrying it anymore.

If you can't find it to buy or you're in a hurry, you can mock up a fake one pretty easily.

In a medium bowl, mix half a cup of mayonnaise, a quarter teaspoon of salt, three-quarters teaspoon of sugar, a teaspoon of mustard, a few dashes of hot sauce, a teaspoon of lemon juice, two teaspoons of rice vinegar, and a packet of hondashi powder (one 8g packet = 2 teaspoons if you're scooping from a larger container). Stir it together gently until smooth and well mixed, then cover with plastic wrap and refrigerate.

You can use mirin instead of rice wine vinegar if you want a sweeter flavor (the rice vinegar is more sour/tangy). The hot sauce is mostly for color since the spice isn't a traditional flavor in Japanese mayo. The hondashi powder is optional, but it adds a stronger savory flavor that you'll find in most Japanese mayo compared to American brands.
