People who don't eat the poo vein eat crawfish at a much slower rate. Better hope there is more than enough to go around.
. My family learned to peel faster. Plus we usually always plan for extra when we boil to have leftovers for some etouffee.

fin, sorry if we've had this discussion before but where do ya'll plant??? husband keeps getting calls to pick up more land but we're maxed out at 2000 with just him and 2 hired hands ... also doing soybeans and crawfish. I just make the lunches during harvest!

I keep offering to help keep track of and pay the bills but for some reason he won't let me ... I think he thinks I'll have a heart attack!

What is the benefit to purging for 24+ hours and how is it done?

All the research and science in the world is not going to keep a hard head Coonass from purging crawfish with salt. He is doing because his daddy did it and likely his Paw-Paw before him.

He's also likely to put a stick of margarine in the pot 'to make dem easier to peel'.

This is true. And a real shite reason to do something.

What's amazing in this thread is that people think that purging=washing them with water.

"purging" is trying to clean them out with salt water and make them purge (or puke as crap out all the poo).

Washing them is just that.

"Purging" with salt water is fricking dumb. The guys that do this likely return crawfish to a boil for a set amount of time, which is retarded. They then put the crawfish in an ice chest and season the outside.

I was gonna say ...

Are you from there as in went to HS there? Went to Catholic school there and transplanted here. Never thought I'm marry into a farming family -- especially a farmer with a BS and an MS degree. But it's all good ... stressful at times and my mom worries about us more than I do. Go figure. After 15 years, you would think that I would have learned much of what there is to know AND to stop worrying!

C'est la vie ... but the plus side, is that I have my own personal crawfish guy!!!

It takes time and they sure try to pinch, but it's worth the effort. Anything less is a waste of time.

Just what do you think this "purging" by soaking in salt water for 5 minutes accomplishes?

Salt might help clean them quicker since it is abrasive. But in the end your just cleaning the outside shell. My feeling is using salt just kills your grass it isn't necessary.
