Instead of using an oven to do the reverse part of the process, use your smoker.
Keep it around 200° for 30 min or so, then hit it with high heat. Maybe cast iron if you have it. That way you get a good sear, and not just lines of sear where a grill grate is.
Go for it. You can't mess it up that way.

This past weekend was a shite show to say the least. I left work early to meet the lil lady at a going away party for her co worker. Poured a big beam then had pigs in a blanket, sugar cookies, & cheese dip. It was amazing. After destorying the beam we headed back to uptown to Black label bbq. I had beef ribs, fries, wings, brisket, and pull pork. The lil lady had a sammich. I picked my teeth with the bones over a double beam. I passed out on the floor and woke up at 5am.

I awoke the next day feeling no pain.
I was thirsty, but couldn't understand why after as much as I drank last night. I took a massive beam dump, then met the baws to run. We did 4 miles, but it felt like 9.
We uber'd to laffiite's for doughnuts and sazeracs. I hate Sunday's at the bar, so I quickly relocated to Carrousel Bar for some sazeracs and a little attempted rape.
By then, I need fuel. Drinking and being husky can be hard work, and the body needs its nourishment.
We headed over to Amelie for more beam and watermelon old fashions, eggs sardou, and a few whaffer thin mints.
This piqued my appetite, so from there we assembled at Superior for 19 tacos, a few burritos, a bucket of beans and rice, and a Diet Coke.
I headed home after that satisfied. I jerked off into a sock and called it a day.

I actually prefer a cast iron cooked steak, but my range hood sucks and it smokes out the house

Get your BGE to about 180-200. Put a meat thermometer it he steak and cook to 118-120. Pull and crank the egg up to around 600 and sear it.
