Picked some up at HEB on Sunday. I am hoping to smoke them tomorrow. Any suggestions? Thanks.

Did these a few months back. Stick to the basics of Texas Q with Kosher salt and course ground pepper. I put down one other rub and paprika with the S+P. Trim the top fat because there is plenty throughout the meat.

Keep proving until the prove slides though like melted butter everywhere. Let them sit 20-30 minutes before slicing.

My favorite thing to smoke on the Yoder. I trim all of the fat and silver skin off the top. I coat them with Cholula for a binder and then rub with Boars Night White Lightning and Chupacabra Brisket Magic. I smoke at 225 for 4 hours then wrap until the thickest part gets to 203. I then unwrap for 10 or so minutes to regain some of the bark. We cook these every couple of weeks.

I smoked them and they were good. The bark was way too salty for my liking. They were on for around 5 hours. I would try again.

I can't find big ribs like those in Baton Rouge. I've been told Costco carries them, but the couple times I've checked I haven't seen them.

I picked some up at Chris’s Specialty Meats in Prairieville about a month ago. They usually have them and they are already cleaned up nicely so you don’t have to trim them. Should have them at the Baton Rouge location too.

My Costco (Lafayette) hasn't had them in about 6 months per the butcher. I heard they were stopping carrying them and ribeye caps steaks, but they had the cap steaks last week.
