Did a few Boudin wraps...

Here's how:

Bought a variety of boudin because it was for a tailgate for strangers..


Smoked low and slow with pecan wood





Then my wife took them all out of the casing and mixed all together.
She didn't take a picture but basically just spooned it on egg roll wraps and rolled them up nice and tight and put them in the fridge overnight. Oh and little cubes of pepper jack cheese.
Then we got here to the tailgate heated up the grease and proceeded just frying them for a couple of minutes each or until golden brown.






Once the sority girls told frat guys they came over and wiped them out

Looking good. I’m sure you could talk a place like Jerry Lee’s into just giving you a bunch of boudin out of the case.

Looks good. At first glance I thought leather jacket girl had a can of Copenhagen in her left pocket.

Any reputable boudin shop or kitchen can sell you "loose" boudin. Just ask for it. It's cheaper, and you don't have to mess with casings.

But then how would you smoke it if its out the casings? If smoke isn't that important id say go for bulk.

Yep, Jerry Lee's sells loose chilled boudin in 3 lb buckets, just gotta call em the day before. We used to serve boudin eggrolls at Uncle Earl's, they're definitely good. I never thought to add pepperjack cheese to these, I'll have to try that out one day.

Those look really good. I prefer Korean Yaki Mandu
style but that’s because I like the super crunchy bit you get in every bite.
