Dehydrator and Sous Vide

I finally emptied my Amazon shopping cart and purchased a 5 tray dehydrator and an Anova Sous Vide. If anyone has any beef jerky recipes or must sous vide items, please share. My mom has been dehydrating fruits for a while now and I decided to finally get my own. The best dehydrated fruit had to have been pineapple, that shite was shockingly great.

I've only used a Sous Vide once and we bought the already seasoned pork tenderloins from Wal Marks and just threw them in the water then seared them. Juiciest piece of meat I've ever had.

Shrimp or Lobster. Serious Eats has several recipes.

going to try lobster but def. a lot of prep work prior to vac sealing in the bag

I just blanch in salted water, ice, and then peel. Stick the meat in a bag with butter and whatever flavoring (garlic, tarragon, basil, lemon zest...etc.). It's not too bad.

Due to Mother's Day, you can find lobsters on sale. Rouse's has them for $11.99/lb. After the above sous vide treatment and ice bathing down, I have these gems in my freezer ready to go for pasta or whatever. This is the meat from two lobsters...

That’s what I do too. I used to over-order from the Lobsta Man (RIP) and do 4-6 lobsters in bags in my freezer for random weeknight lobster pastas.

tl;dr

- Tigerdroppings poster (Wick)finds a guy on craigslist advetising fresh Maine lobsters at a great price, overnight shipping included

- Orders from them, everything is great. Shares with the board, over the years many other posters order through this guy with great results

- The owner of the company where the guy selling the lobster was a partial owner posted on the board with information regarding the situation. ALLEGEDLY, said person set up a shell company to wholesale lobsters at a lower price, marked them up a bit, then essentially sold them off the book originally, but eventually had a website of his own. That person is now under federal indictment for RICO violations, aka organized crime.
