Deer neck chop recipes?

I always just smother them down with some onions and make a gravy but looking to see if y’all have any other suggestions?

My wife does a crock pot neck roast that is in my top 3 deer meals. She seasons and sears, then all day in the crock. So good. Onions, carrots, potatoes in there. The texture and meat flavor of neck is amazing.

Most underrated cut on the whole deer. Easily my favorite.
