Deer chilitos (chili burritos)

I had a few pounds of deer meat left and wanted to do something different with it for a quick meal one day.
I added a pound of chorizo since the deer is so lean. Brown all the meat, then add onions and peppers and cook down.
Next I added the refried beans, black beans, tomato paste and water
I brought it to a simmer and mixed really good. Next i added some corn starch slurry and added it to thicken up
I let it simmer for about 20 minutes. Then I added the shredded cheese and let it melt throughout
I let the pot cool down to room temp before making burritos. I spread some nacho cheese inside the tortilla and added the filling. I brushed it with some oil and slid it in the air fryer for a few minutes.

I ended up with about 60 burritos to put in the freezer for an easy snack or meal

Forgot to mention, I did add chili powder to the meat while browning

You’re thinking about dropping something frozen into a fryer? Maybe it’s the way you wrote it but that’s a very bad idea.

I don’t see how it would be any different than frozen eggrolls or taquitos you buy from the store

You just have to be really careful with frozen food and a deep fryer. It’s not the safest thing to do.

Fry from frozen for most stuff. Fries, boudin balls, frozen battered shrimp, okra, etc. Not sure what y’all mean here. It ain’t chicken or Turkey.

Everything that comes out of a fryer in a fast food joint goes in frozen. You may be thinking of videos of people deep frying a whole frozen turkey.

I had 8lbs of meat. I added 10 cups of water plus 4 cans of refried beans and 12oz of tomato paste. 8 cups of water would’ve probably been better since I had to use a good bit of starch to thicken it up

I am making some chili this weekend.

usually i got starch to thicken in but thinking to use gelatine this time

Very nice. I made a big batch of something real similar a couple of weeks ago. Turned out ~100 burritos. Probably can’t read the hen scratch recipe
