He sent it as a thank you for introducing him to Cajun country and the local foodways. While he was here, he kept telling me he wanted to send me something from his neck of the woods. I am about to call the meat market and ask them a few questions.

The meat market said that if he froze it before he sent it, it should be fine. Also, it keeps for up to a year in the fridge! I'm debating emailing the guy to see if it had been frozen. Oy vey!

Just cut off a chunk and give it to your husband / SO. If it doesn't kill them it's probably OK to eat.

Seriously though I would taste a small piece before chucking it.

Chef Vivian (A Chef Life on Create - LPB) made Tom Thumb once and served them at some event she was serving at. Definitely a North Caroline thing.
