Croissants for bread pudding

Never tried it, but my friend said she had one cooked this way before and she loved it. Anyone have any experience with it? I always do a white chocolate bread pudding for Christmas and didn’t want to do a trial run before Christmas.

I am Pretty sure the white chocolate bread pudding at Jazz Fest is made with croissants and it is the shite.

A long gone restaurant in Metairie called Tailgators was locally know for a cherry bread pudding made w croissants. As nothing on the internet ever dies, you can probably do a deep Google and dredge up the recipe. Iirc, it was published in the Times Pic

I prefer the stale French bread but had a brioche bread pudding not long ago that was really good. Never had a croissant that I’m aware of.

I’ve alwayts used stale French bread as well. I wonder if I do decide to try it with croissants (which I likely will now) should I use stale for those as well? Or bale at light temperature first? Or just use fresh/normal croissants?

We make the creme brûlée bread pudding served by Killen’s Steakhouse. It uses croissants and is excellent.

I think I would let them get stale. Seems they would hold up better.

Sounds like a great idea. We've experimented with just about every type of bread-like medium there is. From the obvious (baguette, brioche, boule) to the unique (pound cake, banana nut bread, coffee cake) as well as the outrageous (donuts, waffles, corn bread) and found that the only constant was that the bread needed to be absent of moisture. Drying in the oven is the most efficient method and produces the best results.
