Crock pot recipe

Had a long weekend out of town, off work today and i want to throw something in the crockpot by noon to be ready for supper tonight. What’s some of y’all’s favorites?

Easiest is chicken breasts, a pack of taco seasoning & a container of salsa
Makes good shredded chicken for tacos & quesadillas & freezes well

Can't beat the simplicity and deliciousness of a pot roast. This shredded asain chicken is great too.

I made a pot of Cuban-style black beans yesterday and they came out great.

- 1 lb. black beans
- 1 onion
- 1 green bellpepper
- 1 red bellpepper
- some good quality andouille
- 3-4 cloves garlic
- 6 cups chicken stock
- 1 tbsp cumin
- 1 tbsp oregano
- salt and pepper to taste

8 hours on low. I took a potato masher to the beans and smashed them a bit to thicken. Also added a few splashes of red wine vinegar to finish.

Was so good.

This but you can also add different sauces/salsas. I like to do about a half jar of salsa then some sort of green sauce. There is this lime cilantro sauce I find from time to time that makes it ballin. I also throw some black beans in there at the end from time to time.

Mississippi crock pot roast is probably my favorite thing out of a crock pot.

You could probably also do the same thing with pork or chicken and it'd taste pretty good.

Pot Roast

2 to 3 pounds boneless rump roast
2 cans (10 ounces, each) cream of mushroom soup
1 packet dried Lipton Onion soup mix
1 beef bullion cube

**I have made this several times and it is delicious**

I have done this, but substitute the rump for a chuck roast and the onion mix for a brown gravy mix. Served with mashed potatoes and corn. So freaking good. Make an open face sandwich with the leftover meat.

Crock Pot Creamy Italian Chicken

4-5 boneless skinless chicken breasts
1 packet Good Seasons Italian dressing mix
1 10 ounce can cream of chicken soup
1 10 ounce can cream of mushroom soup
1 8 ounce block of cream cheese, cut into cubes
Egg Noodles or Rice to serve with

How does the sausage texture hold up in the crock pot all day?

Pulled Pork

4-5 lb pork butt or picnic roast
2-3 yellow onions sliced in half then sliced thin
2 liter bottle of Barq's root beer
18 oz bottle of Sweet Baby Ray's original

Place a layer of onions on the bottom of the crock pot

Place the roast on top of the onions

Put the rest of the onions on top of the pork roast

Pour the root beer on top of the roast, leaving at least 2-3 inches of clearance from the top of your pot (the fat will render and you don't want it to go over the side of the pot)

Cook on low for 8-12 hours

Drain everything in a colander and remove bigger chunks of remaining fat if any

Move meat from the colander to a cutting board and pull apart with hands or two forks

Place back in the crock pot on low and stir in bbq sauce, gradually, to taste

Let it cook for another hour

I like to use those Hawaiian sweet rolls to make little sandwiches but you can serve these on burger buns with slaw, nachos, make carnitas, taquitos, fajitas, tacos, salads....
