Crawfish size and quality

Squeezing out one more crawfish boil this weekend. With this hot weather this week, any word if the crawfish are beginning to get a hard shell?

They were a mix yesterday. Most of the large were tough shelled, smaller (mid-sized?) were good. Catered event.

Ask the supplier where they are getting them. I find pond harvested don't get as hard shelled as the ones wild caught or out of Belle River. That always signaled the crawfish season nearing the end when those hard shelled SOB's came to market.

My place has both pond and belle river…I ordered pond as they been much better this year than the river.

Spillway is very nice and soft right now, alot are still greenish brown and haven't got that dark red color yet, they are fat and sweet, this is around the charenton area

The spillway is fine right now. And you should be fine until at least early to mid June.

Thanks! I’ll let y'all know how they came out. Boiling 50lbs and 20lbs shrimp on Saturday. Btw…I used the stalecracker shrimp boil instructions a few weeks ago. Came out perfect.

I'm doing one more boil and will do two sacks about 35 lbs. each. One for eating and one for picking so I can make crawfish bisque-----the right way and have enough to make some After the Boil Soup along with having some tail meat for crawfish bread, fettuccini or maybe some homemade crawfish pies.

Can't do it this weekend but will aim to do it on Monday so the shells can be picked up on Tuesday when the trash is picked up in my area. I hate the smell of days old crawfish shells roasting in the sun.
