Crawfish fat not yellow

What causes the crawfish fat not to be yellow in crawfish/ some crawfish yesterday the color was gray but the crawfish was not dead

Different, less desirable breed of crawfish, most likely “white” crawfish.

Usually you’ll have a few of these mixed in.

Sounds like deep water crawfish like the type from the basin.

We had some yesterday that were green and grey, passed on eating those.

The small and medium crawfish fat is yellow. The large crawfish have the more dark fat.

We;re late in the season. The shells are thicker. Not as much cayenne seeps in.

Basin crawfish (the best ones) are usually bright red.

White crawfish are whitish brown in color. Black crawfish have the black and red claws with black shells. Brown crawfish are usually mixed Browns. Those are usually pond crawfish but can be caught in deep water too because ponds were stocked with caught crawfish.
