Crawfish "fat" is really not

I imagine many know this but for those who don't:

It's in quotations indicating it's a misnomer. It "contains" fat but isn't "fat".

Anybody remember when you could buy the crawfish "fat" in containers? Haven't seen it in a while but they used to sell it labeled as "crawfish fat" used to add to etoufee's or any other crawfish recipe.

I do. I used to buy it at Langenstein's. They kept it in the freezer and it was great.

Yeah, we had 300 acres of crawfish back in the early 90's and knew better but were always told, "If it's good for marketing, let it ride".

Health Dept put an end to that.

The fat (err pancreas) supposedly can go rancid even if frozen.

Interesting note - that's how you know a crawfish was dead before cooking. The hepatopancreas begins to break down the tissues upon death (start to decay from inside out), which is why "dead" crawfish and shrimp are mushy and break apart.

I always just look at the tail. If it's straight, it was dead before it hit the boiling water.

Was told this is a myth. I've had straight tails taste great and curled tails taste rancid. But it still feels funny for me to eat a striaght tail. I eat it very cautiously
