I have never had an undercooked crawfish. I have had a lot of mushy overcooked ones.

Once it comes back to a boil(steam shooting out from under the lid), they are done. Kill the fire and start soaking.

Referencing the frozen lemon juice, I put a thing of frozen orange juice concentrate in for the soak. I think it adds something.


Also I sometimes will take a whole pineapple, cut off the skin but leave the top on, poke a lot of holes in it with a knife, and just put it in there for the soak. I cut it up afterwards. Tastes great

Not the same. doesn't have clove and other extracts that make them taste sweet. I have had friends that do tabasco and I find the taste of a bottle of hot sauce gets lost pretty easily

I do liquid boil, but never ever thought to put hot sauce in there. Don't think I think I will try that.

I have a friend that adds Worcestershire Sauce to his. He swears by it. Not doing that either

I have one buddy who throws a large jar of pickled jalapenos in his. It's good, but I wouldn't do it personally.

I have a 120 quart pot as well, you can boil 2 sacks at 1 time, Instead of doing 3 boils do 2, 1 1/2 sacks at a time
