Crawfish bisque stuffing

Tried a standard recipe and I wasn’t too thrilled. It was kind of bland.

Does anyone have a recipe they recommend? Or do’s and dont’s?

I’m not opposed to trying that but I would rather go the traditional route and stuff the heads.

I’ve had a some stuffed heads in a bisque that were so damn flavorful that it was the best part. The ones I made were pretty flavorless. If I remember I did the traditional crawfish tails, celery, onion, breadcrumbs, egg, etc mix. But I feel like it’s missing something

That’s pretty close to what I did. What are seasoned bread crumbs? Maybe I just used plain bread crumbs

They come in a can at the grocery store but we usually make them from scratch. If you google you will see how they are made.

I need to redo my photobucket pics for that thread.

ETA; OP before you stuff all your heads cook a small pattie in a skillet to check for your seasoning. You may need to add something.

I read through your thread although it was hard to get an idea of what you were doing without the pictures

Are you frying the mix and then stuffing the heads with that?

Also, do you use crawfish stock? Or could I use crab and shrimp stock?

You can use crab and shrimp, fish or even chicken stock which I use a lot. It’s mild enough and works well.

Before I stuff all the heads I fry a small pattie in a pan to make sure my seasoning is right, if its good to go then I stuff all the heads.

I'm sure any of those would work, my mom, Ta-Taunt or Ma-Ma never used stock, always water.
