They gotta at least lurk here:

"Bill Jones can already picture Blue Giant, the restaurant he will open this spring in the Lower Garden District with fellow chef Richard Horner.

Peking duck will be on the menu. Red-stained char siu pork will hang from hooks. Egg drop soup will warm guests when it's cold.

"We want to steer clear of the word fusion," Jones said. "It's more straightforward American-Chinese food with the best ingredients we can find."

Blue Giant will be at 1300 Magazine St. in a space that once housed the Abstract Book Shop.

Jones has spent most of his culinary career cooking for Donald Link at Cochon and Cochon Butcher, although he worked for a time as well in Chicago. Horner cooked at Coquette and then was the chef de cuisine at Olivia in Austin."

There's going to be some inevitable SJW appropriation pushback, but I hope they can get through it.

They already got a white boy Chinese restaurant in N.O. though it's in the hipster haven which may shelter it from backlash --- Red's Chinese

CULTURAL APPROPRIATION

Have they not heard about all the backlash Andrew Zimmern is catching over his Chinese restaurant?

I'd suggest hiring some hot asian waitresses.

They would probably all be from Vietnamese immigrant families - who run most of the "Chinese" restaurants in town that nobody bats an eye over.

One is a Cochon guy and the other was at Coquette for a while. I think this will be good. American Chinese is pretty damn tasty when you don’t use shite ingredients.

Interesting question: They are doing authentic American-Chinese food, so which ethnic group owns that food?

Talk amongst yourselves.

I don’t care who owns it, I care if it tastes good. Plenty enough legit social injustice inflicted on ppl without manufacturing ire over who gets to cook what food.

that is going to be a slam dunk .... the food options in that area (where i keep an apartment) are limited. And with the new Satsuma opening close things are looking up.

hopefully they have a sweet bar in there as well to grab a cocktail.
