Bacon Has Gotten Really Expensive This Year
I've been buying whole pork bellies for the past 5 years or so, mainly from Costco but sometimes other places. Even 2 years ago you could get pork belly for not much more than $2/lb, I went to Costco the other day and bellies were more expensive than the prime brisket.

The prime brisket is only 2.89/lb at Costco so if pork belly is just a little more than that then it still not a bad deal.

Go to a Mexican butcher. Pork belly is cheap as dirt there. It's half the price at my corner international grocery compared to Kroger.

It's all about supply and demand, I've seen pork belly on restaurant menu's quite a bit lately when I never saw it in the past.
As said it also depends on where you buy, some places carry it as a 'specialty' meat and charge that way for it. Others sell it as a low end cut.

Bacon used to be seen as an unhealthy breakfast food. It's become trendy to include bacon in every course... even sweets (maple bacon donuts).
I imagine the price will only go higher in the future.

This shite has been going on for several years. In six months, there'll be an article saying how cheap it is. It rises and falls. You can still easily find good bacon at a good price or choose to pay too much. Your call. This article is fake news.
