Cooking salmon is not that hard

Always thought it was. Shoot, got 2 fillets from Publix, let em get room temperature, put the oven on 400 degrees, placed the salmon in a glass 13" dish after I Pammed the bottom of it, put a good layer of pesto on the top of the salmon, sprinkled some sliced almonds on top of the pesto, placed it on the top rack with a sheet of aluminum foil on top, cooked for 20 minutes, and bingo...great tasting salmon in no-time and very little clean up.

I brown mine in a skillet for a minute flip it and brown the flesh side for a minute. Then I stick it in a microwave for a minute. Comes out perfect everytime.

Agreed, super simple. But that looks super busy. Did you find that the pesto overpowered the natural flavor of the salmon? I feel like it would.

20 min at 400 is way too long. Id say you overcooked that salmon.

oh hell no! I bought the classico brand and it had the perfect taste... now had I not cooked it as long..then yeah, the pesto would probably overpower it, but with it on top, the flavor filtered just enough into the fillets to add just the perfect amount of flavor without ruining the salmon. Better than my brother who just drowns his salmon in ketchup!

No kidding. For me some salt, pepper, butter and fresh dill. Works all the time.
When I lived in VA, salmon was on average 4.50/lb.
Of course that was about 10 years ago.

actually no. Ive tried different times and temps with very good success. These fillets were over 1 1/2 inches thick and cooked it PERFECTLY!

Maybe it's cooked well on the inside, but that plate just looks like a big grey mess. Pretty off-putting. May just be that I absolutely detest raw almond shavings.

My God, I hope you're joking.
As for the rest, that's really interesting. You're probably gonna take some shite for using classico brand pesto if I had to guess, but if it gets a good flavor for you then all the more power to you.

With salmon, less is more. I marinade in an oj/ soy/ olive oil/ sea salt mix for 4 hours or so and cook without adding anything else. I always grill over charcoal. I find roasting or sauteing kills some of the salmon flavor. And I only buy Pacific Northwest salmon....no atlantic salmon which is too bland IMO. So if you did have atlantic then maybe you would need some accoutrements. I hear ketchup is a great addition.
