I've been doing my rattlesnake in the Instapot lately. May not be quite as good as grilled but it's real easy and the whole family loves it. For the small picket eaters you can also cube it up and make serpent spaghetti. It's a hit

I've eaten rattlesnake a few times, but always fried, and even then it's pretty chewy.
A snakes body is basically just one long muscle and unless the snake was pretty big, there's really not a ton of meat on it since it is concentrated around the backbone.

I wouldn't grill it, its too thin of meat and you aren't going to want to eat it overcooked. With it being so thin it will be extremely easy to overcook.

Here's a suggestion if your set on grilling it.
Cut it up in whatever size you want to cook, cover it with buttermilk and let that sit overnight then season the meat and then wrap it with strips of bacon so it will add some fat to the meat as it cooks since rattlesnake meat is very lean.

Butter garlic wipe. Sear and eat. Don't over cook it. it's a very clean a delicious meat.
