So I need to cook about 100 servings of jambalaya. I do nor have a big jambalaya pot.

Could I use a crawfish boiling pot to do this? Anyone have any success or failure here? I have an 80 gt and a 120 qt pots, I was thinking of using the 80.

I am working with 25 lbs of rice/seasning mix and about 30 lbs of meat.

not the best to use, you need a rounded bottom and sides to stir properly or it clumps up bad and burns on the edges since its not being mixed well.

its not impossible, but that is the reason that jambalaya pots are made the way they are.

I think that in this case, the flat thin bottom of the boiling pot is going to result in burning in the middle rather than the edges. That thin metal won't distribute the heat.

you make a good point

might be a 2 for 1 and just burn a crust everywhere?

OP needs to borrow a pot AND spoon for that pot from someone or hes in for trouble

Crawfish pots aren't well suited for jambalaya. It will be hard not to burn things.

For a big event, I would not want to try cooking a huge jamb for the first time in a big crawfish pot.

Could have ended it there. I'm amazed at the amount of people that come on here with the task of cooking for a large group of people(100 or so) and have never done it ever.

I would be nervous as hell. If you mess up, well your 100 people's main course is now ruined.

No shite huh? Like did OP volunteer to take this on or did someone ask him to do it not knowing he doesn't have the equipment to do it?

OP if you're hell bent on not buying a proper set up to handle this size cook, I'd pre make however many batches in whatever pot you usually cook in and just heat it back up on site to serve. Using a crawfish pot is a terrible idea.

Jambalaya calculator says you'll need a minimum pot size of 7 gallons to make the amount you want FWIW.

As someone who has exclusively used a 6 gallon flat bottom dutch oven, i can attest to this statement being false.

If you didn't misspeak and really meant 6 gallon, please share a photo of this.

Thanks! That's impressive. I'd never seen one. My flat bottom go to is a 9qt that I use for most jambalayas. I have 10 gallon round bottom in the shed. I also, don't believe shape is that big of a deal.
