Because my diet requires me to eat the same thing all the time, I cook for the entire week, every Saturday afternoon.
Put the brown rice cooking
BBQ some chicken breasts, turkey burgers, and smoked sausage while I listed to LSU Baseball
The only thing I cook every day is my eggs

I love doing this. Try to grill some chicken for a couple of meals, steam or roast some veg, maybe a pasta dish or something in the slow cooker. Since I dine solo a lot its sometimes difficult to get portions right but I still eat better and don't waste much. Also forces me to shop with several meals in mind. Can't claim to do it every week but often enough that I've lost 10lbs in the last 2 years.

I sit down and plan every meal for the week, log it all into MFP to make sure I'm under my calories, and then go grocery shopping all on Sunday. I know exactly what I'm eating and drinking through Friday night... But I do not make meals for the entire week :/ I am not much of a leftovers person, so meal prep doesn't really work on me.
I'll sometimes make a batch of red sauce with veggies and beef/meatballs, but that's the extent of it. Containers with chicken + veg just don't appeal to me and I end up wasting money because I throw them out. I really wish I was more of a leftovers person.
I DO prep lunches the night before though. When I cook dinner and have the kitchen dirty, I'll prep lunch for the next day. Tomorrow is a salad, and I already have the dressing, toppings, protein, and lettuce weighed out and packed away.

I do it weekly. Usually I'll do one recipe that is "new" and one or two old standbys. I made a 5.5 lbs pork butt on Saturday so didn't have as much to make Sunday, but cooked a whole 4 lbs organic chicken with tons of veggies under it with chicken stock and made some good ole collard greens.
Chili is a great one for you as well. It lasts and gets better a day or two later.

For those that do, what are your limits as to when things need to be thrown away? I know I'm overly cautious, but I cook with chicken/turkey a lot, and feel I would need to freeze it if I'm cooking it Sunday, and expect to eat it Friday.

I don't do everything. But i make lunches and dinners for 3 days on Sunday afternoons. Saves so much time and money.

I usually cook proteins 2 days a week, sides usually about the same. We always keep some frozen steamer bag veggies for nights when we don't have any cooked.
