Cooking a stuffed cow tongue (updated with pics)

Gonna attempt to cook my first tongue later today. Should I do anything different than when cooking any other gravy? Just brown and cook for 3-4 hours right?

More pics to follow once things start smelling good.

Went in for 2 hours this am and left bc we were slow, I was tired and hungover from concert.

Uncle Jack, your photos definitely show you know what you're doing, but the sequence I find a bit odd, and I don't know what you did.
