Cooked a prime rib today.

Winn Dixie has these on sale for $6.99/lb, which seems like a great deal. This was just shy of 6 pounds, so about $40. Salted heavily and let sit on wire rack overnight until this afternoon. Then before cooking, rubbed with avocado oil and seasoned liberally with black pepper and garlic powder. Reverse seared. 225 degree convection oven until 120 internal temp. Rested for an hour, then back in a 550 oven for 10 minutes to sear the crust. Came out great. No plate shot, as me and my buddy were eating it like animals. Made a simple horseradish cream sauce to go with it.

That looks great! I forgot to take pics, but I did one on the smoker Saturday, it was perfect. Kept it under 300, took about 3 hours to get to 125. Can't pass up 6.99/lb (at Kroger and Publix here) for this, especially when sirloin and chuck are close to the same price. Also grilled some corn.
