What are you guys doing to the more orangy brown color?
This time I cooked the pork first and really cooked it longer than I normally do. Turned the heat up so that it would stick to the pot. Stirred often and seasoned with Nunu's while cooking.
Added the sausage and cooked for a while before removing all of the meat and adding the vegetables.
Also, like Geaux Tigers 0107 mentioned, I added water and cooked it away a few times.

I've learned that the judges opinions area often wildly different from everyone else. I like having a people's choice award as well.

If it’s judged like JFA standards, I would say it’s not “clean” enough. Jambalaya festival type criteria is very little or no “black specks” or any small meat or vegetable particles. But don’t know if that’s the type of judges you were facing.
When I first starting competing I would get so down and distraught when I didn’t do well with judging, but after you keep doing it again and again, you learn to blow it off like nothing.
