Coconut Milk Question

When I watch videos of people cooking with coconut milk, it is always a liquid, like milk. When I open a can of coconut milk from the store, it is the consistency of soft serve ice cream. Am I supposed to heat it a little in the microwave prior to use? Or possibly add water? I am curious.

You are likely buying the americanized version

You can also not buy it in a can, go look in the juice aisle and they will have cartons on the shelf.

It's not the same product. The stuff in a carton is diluted. Each has its purpose but they aren't interchangeable.

It just coagulates at room/cool temps.
Run some warm water over the can or sit the can in a bowl of warm water for a few minutes. Shake and repeat as needed. It will liquify

You sure you didn't buy coconut oil instead of coconut milk? Or maybe even coconut cream (for mixing cocktails)?

I bought the stuff that says “unsweetened coconut milk”. It is in the Asian food section at Walmart. When I made the green curry a few days ago, the end result tasted and felt correct, I was just kind of weirded out by the consistency coming right out of the can. All the videos show it being a liquid. This was definitely creamy.

there are three coconut liquid products
coconut cream is the processed sweet shite you use to make boat drinks; its coconut milk and sugar, cooked down.
coconut milk is the liquid squeezed out of of coconut flesh, its milky white and contains coconut oil, which can congeal at the top (just shake the can).
coconut water is the clear water that comes from the inside of the nut, contains no fat.
