Maybe more Lafayette folks will buy in to a more traditional Italian restaurant and not mind dropping big bucks there. (I hope they do.)
My only point is, and it has been since before Cochon opened, is that it is very difficult to go to Lafayette and pull off a high end, pricey menu that's based on local traditional food. Lafayette is very familiar with preparing smoked meats, pork, duck etc.. the whole German/French thing (remember Link's family is from this area.. and I'm related to his family.. my family's picture is in that dining room.)
Even though Link did bring his A-Game, Lafayette nonetheless did not respond suitably to the eclecletic menu because it's too close to what Lafayette eats for much cheaper elsewhere, or they can prepare themselves at home.

eta: I only mentioned the family relation to say, I'm not trying to bash Link. I really liked the place and wrote a positive review on this board.

I have known people who didn't give it a chance. It was in River Ranch, therefore they expected it to be out of their price range. I didn't think it had bad pricing. Of course, I wasn't ordering boudin.

The two times I went, I had the wood fired oyster app. Divine. I regret my entree orders, though. I should have had the duck confit and the pork cheeks. Whatever I had is not memorable, because I have no clue what it was.

I honestly don't know where this comes from. He was born and raised in Calcasieu. He might have spent some college years in Laffy. And Politiceaux, I'm not trying to be a pain but this isn't the first time I've seen people say he is from the acadiana area. Even the bartender at couchon said this. He has tons of distant relatives in the Roberts Cove/Mowata area but he is all calcasieu.

I'm all about him being from Calcasieu. That's my neck of the woods. I just looked through the introduction of his book Real Cajun and he mentions Sulphur briefly before going on about Acadia Parish and Acadiana in multiple paragraphs. That's where I got the impression.

Me too.

Sulphur and the surrounding area. My dad is from Sulphur and I try not to admit that much.

Donald Link's grandmother was a Zaunbrecher.. They're (the Zaunbrechers) from Mowata.. That's his "link" to Acadia Parish. Pardon the pun.

There were Zaunbrechers in Jeff Davis Parish also. Lake Arthur area, at least back when I was growing up. Probably all related?

I'm glad I collected my money on the building. That in itself was a killer. What they spent I mean.

And I quit at page four or so but Donald Link worked at Sammy's Highland Road while at LSU if not Germans. If it is well bite me.

Poor management, especially at the restaurant level is one of the biggest reasons they are closing. People will not tolerate poor service, nor some of the other crap that was going on over there. IMHO

Their oyster sandwich is great!

Yes, and so were the chicken livers. The burger was very good as well, but a bit salty. I think it was from the cheese.

I met Donald a couple of times. He seemed really nice. I went to the restaurant at least three to four times and each time my dish was executed with great care. I am sad to see that they couldn't make a go of it, but that's a big note to pay every month and there are so many choices in that neck of the woods. Personally, i'd like to see him make a go of cochon butcher in Laffy, But that will probably never happen
