Cinnamon Sugared Pecans (recipe with photos)

These guys are good and if purchased in a pecan store, really expensive. However they are easy to make. Here is how we do it.

Need: 1 pound pecans (whole ones are nice, but pieces work). Also need Sugar, Vanilla, cinnamon, salt, egg white, water, Pam.



Use 1 cup sugar, 1/4 teaspoon salt and 1 teaspoon cinnamon.



Mix these together.





Separate egg white



combine egg white, 1 Tablespoon water, 1 teaspoon vanilla and whip until frothy. The cinnamon you see in the bowl is a small (spill) mistake.





Add pecans to egg mixture and mix until all pecans are fully coated.



Add wet pecans to the sugar mixture and stir to fully coat the wet pecans with the sugar mixture.





The coated pecans will be spread on an oiled or buttered sheet pan







The pan is placed on the center rack of a 250 degree preheated oven for 1 hour, stirred every 15 minutes. Taste at the end of an hour and if the pecans are not dry and the sugar coating set, leave for an additional 15 minutes.



Remove when pecans are dry and sugar coating has solidified.



Stir to break apart any pecans sticking together and allow to cool.

I did this yesterday, but used brown sugar, cayenne, coriander, allspice, granulated garlic, and kosher salt. Very tasty. 300 degrees for 30 mins.

Looks delicious. Pecans are the most under-rated nut and the best imo.

Mine are done and they are a hit. I added a 1/2 tsp of cayenne to it. I hope they last until the party.

The recipe is moisture sensitive, in that until the moisture exits the pecans and sugar, they will never get dry. You could try soaking the pecans in bourbon for a few minutes (long enough to get them wet and then go from there with the egg whites. It will take longer to get them dry in the oven, and you might want to lower the oven temperature maybe 10-20 degrees to keep from overcooking the pecans while attempting to get them dry and dry out the sugar.

You might also try soaking the pecans in bourbon and then allowing them to air dry for a day or two. The alcohol and water will evaporate, and the bourbon taste will stay with the pecan. Then do the recipe using bourbon pecans, just as above. As I think about it, that should work the best.

Bump.

Just put these in the oven. I put a little twist on it this year. I soaked the pecans in Cinnamon rum prior to egg/cinnamon sugar. We shall see.

I got giddy for a second seeing MD’s name next to the thread title. He hasnt posted since around June. I’ll assume for the worst, but hope for the best.

If anyone knew him outside of TD, please let us know how he is doing.

I think I did this exact recipe a few months ago. I had some of those Bucees pecans and had a craving after. They’re damn good! Glad to see you back MD, merry Christmas
