I have a 100 quart pot and want to try something different for a batch. I have a 1 lb bag of chinese red pepper. For those that have used it, how much is enough to get a good taste of the pepper but not be overwhelmingly hot?

I already plan on adding my normal amount of dry seasoning and some liquid boil.

Thanks. I thought about throwing the whole 1 lb in there but it seems like that could be a bad idea.

Add a cup to your other seasonings and then adjust to your taste.

I imagine you do it like cayenne. I'd do about a cup and taste from there.

I've completely converted to Korean chili powder instead of cayenne. It's cheaper and packs the same punch for me. I get the big bags at my Asian mart and use it the same way I would cayenne.

Where did you get it? I've looked everywhere.
