Server told me a few months back that they were having trouble sourcing enough to have it on the menu full time.

ah, the ole' supply chain excuse

This. They have gotten rid of alot of their mainstays, including shrimp & corn soup, the crabmeat sandwich (Lagniappe or something like that), the aforementioned nachos... Yet, they keep their shitty gumbo.

There's a reason we go less and less....

Walkons dropped the gator wrap as well. Which I thought was the best lunch item on the menu.

Must be the drought, all the gators moved.

Here at the new Chimes in Lafayette now and they still have it. It’s not in the menu but when you order the gator they ask if you want it blackened instead.

was in town for a quick visit last week ... and my uncle asked, "anything you are craving". I immediately said shrimp and corn soup and some blackened alligator. BOTH were off the menu, which was disappointing of course but the LSU Chimes is such a dump now. Half empty, felt really worn in the worst way, managers were openly working on paperwork at a table in the restaurant and the marquee box at the Varsity was so sad and filled with past shows. Maybe nostalgia tinted my view, but it was depressing. At least the Covington version feels right and i am sure Lafayette will deliver.

I’m right there with you. I used to work at the Varsity (which by default meant you quasi worked at Chimes )back during Saban/Miles era and the atmosphere or charm of both places is only a memory now.

My old roommate during that time was a kitchen manager at Chimes. Everything was on the menu for me at that point, good times.
