Chicken Piccata Meatballs Recipe

This kept popping up on my Facebook page and the video made them look good, so I made them last weekend. Delicious!
The meatballs had a lot of flavor, as did the sauce, and they were so tender. I was expecting them to be a bit dry, but they were not at all. For being as tender as they were, I was surprised they didn't fall apart.
I doubled the recipe and also made extra sauce. I used the zest from the lemons and added that just before finishing the sauce for more brightness.
We had it over angel hair pasta. We all ate leftovers as well and it reheated just fine. The meatballs were still tender and juicy.
You can also make it ahead of time and reheat if you like. I browned the meatballs and then did the sauteing. I made the sauce and simmered the meatballs up to adding the last few ingredients which I did before serving.
I used an ice cream scoop with the squeeze handle that I sprayed with Pam to form the meatballs. Worked great and they were just the right size. It took no time to form them all. I dropped them from the scoop into a bowl of bread crumbs and rolled them around.
If you like piccata dishes, give this one a try.

fantastic and super easy
the 1lb recipe fed 4 easily
served over spaghetti with roasted delicata squash and okra. We used veal instead of chicken and I added a couple chopped garlic cloves to the sauce, it just seemed wrong not to

Veal is a good call. I almost went with veal instead of chicken as veal would have been my preference, but I was making them to feed my Mom and she wanted the chicken. I'd like to make them with veal as well. I forgot to add that I used garlic paste and powder in the wet mixture. Like you, I thought more garlic was needed.
I also liked that she mixes the wet mixture together to before adding the meat. I'd never done that before for meatballs. I've put it all in together and it takes longer to incorporate everything. I looked up her Italian meatballs and she uses the same method. It makes sense because you don't have to overwork the meat.

Unfortunately, for whoever it is, I rarely look at votes on my posts and an anonymous dv juvenile makes me laugh when I happen to see them. It doesn't bother me, so whoever it is, is wasting keystrokes.
