I’ve been plowing through my bag of goodness from Bergeron’s and wondering if I could make these at home. I’ve made pork cracklings, and assume I could follow the same path, but interested to know if someone has tried it. And where in the heck can I source a bunch of chicken skins to start with?

Don’t the ones at bergerons have a little meat attached? You could probably buy a bunch of quarters and just pull it yourself, freeze the meat.

Heard they are called “quacklins”. Learned that yesterday...

Chickens don’t quack...that doesn’t make sense.

I didn’t realize NuNu’s had them. Yet another reason to come poaching when I’m in town.

I keep thinking someone is packaging all those boneless/skinless thighs for all the grocery stores, I want that little skin/fat cap they are removing.

I've gotten them from Nunu's in Scott and Fremin's in New Iberia. Like the Nunu's kind a lot.

Had them side by side. The nunus were better IMO.

Capedeville used to have duck cracklins. They were excellent.
