Sysco sells a professional mayo, not sure what they call it, but it’s damn good. IDK, obviously, if that’s what CFA uses, but my friend who owns a restaurant uses it as a base for a lot of stuff. Can’t recreate them without the mayo he has though.

Heavy mayo is similar to what you can make at home which is why it's highly recommended to make your own. Not just for the taste, but the extra emulsion (egg yolk to oil ratio).

I prefer their mayo to the other brand they also have in there restaurant.
