Cauliflower Rice Boudin

I got a craving for boudin after reading a few posts & watching a couple of YouTube videos. Not wanting to eat rice, I substituted cauliflower rice, complete culinary blasphemy.
I started off by popping a 12oz piece of pork butt,a 10oz piece of skinless pork belly, & 6oz chicken livers into the instant pot with 1 bay leaf, 6 cloves of garlic & 1/2 cup of water, set on high pressure for 45 minutes, natural release.
After the pressure float valve fell, I removed the pork, & garlic and added 2x 12oz bags of cauliflower rice & returned the lid. There was still enough heat to gently cook the cauliflower.
Then I shredded the cooked meat, livers & smashed the cooked garlic, added chopped green onions & slap ya momma. By this time the cauliflower was done & had absorbed a good amount of the cooking liquid.
I discarded the bay leaf & added the cauliflower rice & liquid to the meat mixture and adjusted the seasoning with more salt, SYM, & black pepper.
Its not pretty to look at but it tastes good.
Decided to make a few boudin balls in the air fryer with almond & gluten free flour.
Paired it with a sauce of Dijon, mayo, & Louisiana hot sauce.
After eating a bit, I packaged the rest up in 8oz chubs for the freezer.
Overall, the flavor was good and satisfied my craving but, the rice was definitely missed.

This is something you do for your diet, but you don’t tell anyone. Messing with sacred boudin will bring you bad juju.

I made boudin for the first time this summer. It came out great except I forgot to separate the meat from the juices when warmed. So when I tried to stuff it in casings it was a complete mess. So, I did everything I could think of to use up the unstuffed boudin. I stuffed it in chicken, pork tenderloin, added it to bell peppers, ladled it over grits and finally added it on top of cauliflower rice. It was great and will do it again soon.

Cooking the cauliflower in the pork liquid helped mask most, if not all, of its flavor. You wouldn't know it was in there unless I told you or you saw it.

They sell this at some little shop in marksville across from casino.
I bought some once.
