Cast Iron Cooking Newb needs advice

The other thread on Outdoor to Board convinced me to get a cast iron skillet for steaks, burgers, chicken, shrimp etc so I can cook outside on my grill.

I'm looking at either this one:



Or this one:


12 inch Chef skillet?

Which one would be best? Or a better option?

What kind of oil should I season it with?

I'm going to use Avocado oil for the actual cooking. And get one of those chainmail things to scrub it.

Anything else I'm missing, need to know?

I always season mine with Crisco. I’ve never used mine outside on the grill though. The chain mail things are nice, my brother has one. I mostly use kosher salt and a paper towel for cleaning.

I would definitely get the second one. With a flat surface, you get more meat to cooking surface contact. A lot of flavor comes from browning. The first one will give you strips of crust but the second will give you a consistent crust across the meat, depending on how the flat the meat surface is.


Also, if you don't feel like dealing with the cleaning/seasoning pains of cast iron, look at enameled cast iron.

Don't get that grill pan. It'll get dirty and getting it clean inside the grates is a complete pain in the arse. I use lard when I first seasoned my cast iron.

2nd one all the way. It’s more versatile and easier to clean.

I had the 1st one and got rid of it.

I like to put mine in the oven to get it hot.

Just put it in the oven and then turn it on to like 400 or 500 degrees.

When the oven clicks, its hot. Then I move to the bruner and start cooking.

I have probably a dozen pieces of cast iron. The one that gets used the least is the grill pan. I bought it because it was like half off an already cheap price but it is harder to clean between the grooves. The only thing it really was useful for was cooking burgers when it was raining outside. The grease drips down into the grooves. But now I just do smash burgers instead.

Is the 12" "chef collection" version (the one pictured) a good buy vs the regular version?

I like the more sloped sides, and supposedly the handle is more elevated. It's $50 vs $30

Would make for a great egg pan and for cooking meat. I like the traditional sides for cornbread.

Why would you get a grill Pan to cook on a grill with?

You can just use the grill.

I've got a grill pan similar to the pic 1, but with a removable handle. I've had it for a long arse time and maybe tried to use it on a campfire once or twice. I even just got it restored and re-seasoned but it is just decoration now. It's kinda neat for campfire cooking I guess but the regular skillet would be my pick.
