Carrot cake...why do they almost always SUCK?

My mom's carrot cake is by far my favorite cake of any kind. Whenever I try someone else's (store, bakery, restaurant, etc.) it always SUCKS. I mean it doesn't just not quite compare...it plain sucks. Why is that?
The only carrot cake I have ever found outside my mom's that I like is made by Laurel St. Bakery.
Do you like carrot cake? If so...where have you found a good one?

I am the same. My mom's carrot cake is the only carrot cake I like. And it is fantastic.

Most carrot cakes are too dry, or have too many nuts or the frosting is not right.

I also hate raisins in carrot cake. Didn't mention that the first time.
And I roast the pecans and cook the carrots a little too before putting into the cake.
I like a moist dense carrot cake. It's always been one of my favorites.

My mom's is good too. Most bakeries don't get it right. I kige all of this.

I think my mom's is the most unhealthy thing known to man. the cake is just carrots, brown sugar, cinnamon, flour, and other spices. The cream cheese icing has the pecans mixed in. HELL to the NO on raisins. No pineapple in my mom's...it's either butter or oil.

I agree with you. You'll also find some cakes with the carrot pieces being too big. Your cake sounds great!
