Caprese sandwiches are super underrated

Just had an amazing one from a food truck. Legit don’t know when the last time I’ve had a sandwich that good. The bread was amazing. Warm and soft and just a hint at crispness.

Made something similar with leftover fried eggplant this week. Nice combo.
