Can you season raw meat before you freeze it?

I like making sous vide bags, so yesterday I cut up a bunch of whole birds and some pork chops and vac sealed them, but I didn't season them. I just added some herbs, butter and crushed garlic.
Normally I like to season meat for the water bath, but I wasn't sure about seasoning before freezing. Would the salt affect the meat while frozen?
As of right now, I would just season before the sear. Would I be able to tell the difference?

I've always wondered this too...not really for things like steaks but for chicken and especially pork. I don't want to mess up the texture of the meat and wondered if the salt would stop doing its thing as soon as I froze them. If I'm cooking something for more than a couple hours (thinking about sous vide ribs, roasts or chops), I figured the salt being in the bag would do more than just salting something before the sear.

My dad used to do that with deer steaks. He'd throw them on the pit frozen and they turned out great...kept the middle from over cooking. Not sure that's totally legit, but we ate them.

I do it with chicken breasts that I am going to SOUS VIDE.

I would just season your bath water to your liking, throw in the chicken and pork, climb in and soak for about an hour and a half in warm water. That way you're relaxing, get fresh n clean, and cooking all at the same time.
