Nice cool morning with a window and door open for fresh air, Cajun music playing and onions cooking down!

Sundays was my dad's day to listen to bluegrass and cook. It was a cool experience for all of us. I really should restart that tradition now that I am thinking back on it

It was a rice & gravy meal.
The meat browned.
Onions
Rice & gravy, fire roasted green beans, pickled beets a couple of pickled quail eggs and a fresh out of the oven biscuit.

Cooking down a time consuming gravy or frying fish/shrimp on a beautiful Saturday afternoon while drinking cold pops and listening to Gumbo Phil on KBON...I can think of only one thing better to be doing.

Throwing in the onions/peppers and watching them turn brown is one of the little things in life that brings me happiness.
