Every year at JazzFest, Prejean's shows up with pheasant gumbo, and it is outstanding. I'd like to try it.

Has anyone bought pheasant meat online? Are there any local suppliers within a reasonable distance from New Orleans?

I have heard of more than one cook finding food poisoning in canned (cooked) pheasant.

I am trying to remember if I recall any cases in the past few years (and none come to mind - a quick google search brings up nothing), but 5-10 years back, it seemed to be a common concern.

Covey Rise on the northshore used them for canned hunts, you should be able to get fresh ones from them

Someone just last week was selling live pheasants in Poplarville I believe it was. I'll check later.
