Found them but they did not have a butcher there so I gotta go back tomorrow.

How do y’all request to have them cut? Or should I just ask the butcher what he thinks is best?

I just broke them down myself.

Slicing through the center will get you two 4 pound boneless roasts from the half of the butt that the bone doesn't extend into. I popped those into the freezer whole. I didn't need a whole piece of meat for tonight, so I roughly cubed one bony half off of the bone for tonight's dinner and I carefully deboned the other bony half and unrolled it while I was at it and ended up with a piece of meat that's going to make a good roulade or stuffed roast.

Those are my favorite 2 cuts glad I could help the strips are very versatile great as is easy to cube into stew meat chunks and good to pass through a grinder I laugh when I see folks cut grinder meat into chunks strips are so much easier to feed in to them. Grinder dont care how long something is just how big around. saves lots fo cutting that way

Thanks for starting this thread.

Got the butcher to just cut it into steaks and just threw two in the oven on 350 with some spices.

Tastes good enough for me and it’s great as I now have a ton of meat for my small food budget. I should’ve grabbed two!

Do they do this often? I need to be on the lookout from now on.

Trust me I have a very tight budget. glad I could help. Rouses does this monthly and I usually let yall know when they send me sale papers to my email. Me and the wife go and they let us get 4 packs they will cut them many different ways all ya gotta do is tell em. I am working on a post on the simple quick way we do em when I do I'll post it on the f/d bord

I got two packs. It takes less than 60 seconds to debone them. I’m using them for making sausage this morning.

I bought a twin pack. Smoked them at 225 from 4-10 Saturday then put them in my Magnalite Roaster with about 2 cups of water and baked them in the oven at 200 for till 6AM. They came out great.

Also, you don’t have to be very precise with the deboning job. I purposely leave some meat, then smoke the hocks for beans or soup. Pop them in the freezer after they’re smoked wrapped in plastic.
