Looks good man. I was either doing brisket or a shrimp/ crab boil. Seafood won out.

I may just very well put a brisket in late tomorrow night for Sunday eating.

How long and at what temp should I smoke a 5 pound brisket? At one end it's hardly 2 inches thick. I'm worried about drying it out.

At 5lbs it is going to be hard to get right, I would do hot and fast to keep from drying out, I would say do it at 350 for about 4 hrs.

Just put my pork but on the smoker. Should be done around 10 am, around 6 I'll put my baby backs on. Be ready just in time for lunch before the game.

The one in the pic is just under 13lbs...sat with a dry rub for a few hours and have had it at right about 230° since 4:15 pm...probably stick it in the oven to finish about 4 or 5 am

Yep anything about 12-18lb is going to smoke good from 225-275 and render the fat well, it is just almost impossible to make good eating brisket from a 5-8lb flat.

At 350, you can do a 15 pound brisket in 4 hours.

I'm assuming he has a small flat, probably trimmed already and nice and lean. That sucks. But, to keep from drying it out, put some smoke on it for about 3 hours at 250-275. Should be in the 160 degree range at that point. Foil it with about 1/4 cup of water at that point and put it back on for another 3-4 hours, removing at 195-200. Leave in foil, wrap in towels, and let rest for an hour minimum. Should be nice and juicy.

How thin is the thinnest part? Wouldn't the thickness dictate the cooking time, not necessarily the weight?

I have a 5.5 pound flat that has a fat cap on it still. I've only done brisket once before and it came out pretty decent. I didn't want to get a huge piece and screw it up. This is sorta like practice.

I'll piggy back this one until tomorrow.

19 pounds before trimming. Usda choice, 2.20 a pound. It's nice having a brother that's a chef.

Rub is black pepper, white pepper, sugar, onion powder, garlic powder, cayenne, chili powder, mustard powder.

Ready for hanging in the pit barrel tomorrow morning.

Fat cap still on is good. I would guess that's basically the same as what I cook, because I like to cut my flat off square with where the point starts anyway and cook them to their own temps so the flat doesn't dry out. Smoke it for 4 hours at 250-275 and foil it the same way as I said earlier to the same temps. It'll be great!

Nothing like an overnight smoke on a college football Saturday. One of my favorite things to do during football season. I put 2-7lb butts on at 10:30. Tomorrow will be glorious.
