Breakfast Casserole Ideas

Got charged with bringing a breakfast casserole to a brunch party Saturday, and looking for some ideas. Only needs to feed 4-6 people as it won't be the only casserole served, and I prefer something savory over sweet. Someone else is already bringing a French Toast style casserole.

I've done the sausage, egg, cheese, and white bread one 100 times, and looking to do something a little different this time. I have a recipe for a bacon, spinach, and cheese strata I'm considering, but I've never made it.

Any home run ones y'all have done before?

I would have to look it up but there is a basic one using shredded hash browns that always comes out great.

thats a good call on the hash browns...
other starches you might consider are rice, grits, polenta, tortillas, etc

Biscuits and gravy casserole. Easy to make from scratch and even easier to make with store bought sausage. biscuit roll, etc

Buy two twin packs of frozen pie crusts

Blind bake 20-30 mins @ 350° after docking and filling with dry beans, chill, and turn oven down to 300°.

While crusts are baking/chilling prepare:

Custard mix:
9 eggs/1 quart heavy cream
Whisk vigorously until fully homogenized
Should be enough for all 4 crusts

Fillings (making two of each type):
1. Chopped bacon (12 oz - eat leftover), caramelized onion (1 med.lg small dice), shredded swiss (8 oz)
Cook bacon, remove, cook onions in bacon fat
Chill

2. Diced ham (8 oz), shredded cheddar (8 oz)

Split bacon/onions/swiss between 2 crusts
Split ham/cheddar between 2 crusts
Pour custard over ingredients
Hit with salt & pepper

Bake uncovered until custard sets up (no jiggle in the middle) - maybe an hour depending on oven

These are ideas. You could use shrimp or crawfish, tasso, sausage, etc., also peppers, asparagus, mushrooms, different cheeses, etc.


They're basically fake quiches. They are silky and rich, and awesome, and they're easy to make. Not to mention they travel well & reheat easily.

Done.

I've seen this shrimp and grits casserole posted often on Facebook. I haven't tried it or had, though some friends have and liked it. I think I'd add some cooked bacon or sausage to it.

The recipe was initially in Southern Living.

Shrimp and Grits Dressing
from Southern Living Magazine

1 pound peeled, medium-size raw shrimp
3 cups chicken broth
1/2 tsp. salt
1/4 tsp. ground red pepper
1 cup uncooked regular grits
1/2 cup butter
3 large eggs, lightly beaten
1 red bell pepper, diced
1 cup fine, dry breadcrumbs
1 cup chopped green onions
1/2 cup grated Parmesan cheese

Preheat oven to 325 degrees. Devein shrimp, if desired.

Bring broth and next two ingredients to a boil in a large saucepan over medium-high heat. Whisk in grits, and return to a boil; reduce heat to low, and stir in butter. Cover and simmer, stirring occasionally, 10 minutes or until liquid is absorbed. Remove from heat.

Stir together eggs and next four ingredients in a large bowl. Gradually stir about one-fourth of hot grits mixture into egg mixture; add egg mixture to remaining hot grits mixture, stirring constantly. Stir in shrimp until well blended. Pour grits mixture into a lightly greased 11-x 7-inch baking dish.

Bake at 325 degrees for 55 minutes to 1 hour or until mixture is set. Let stand 10 minutes.

I should add there are 2 guests there that I know hate grits. I don't understand how anyone could hate grits, but whatever.

Had thought about a biscuits & gravy type one. May go that route.

Go with Browl's suggestion and use the ingredients of your choice. Quiche freezes well, so I assume his will freeze also if you have extra. I love quiche. A jumbo lump crab quiche with some gruyere is quite good. There are many flavor combos you could do.

Do you HAVE to bring a casserole?

I know it sounds snobby but I can't stand a fricking casserole. Casseroles make me think of either the 80's or Pinterest, both of which conjure thoughts of just plain bad food.

I went to a party and someone had made the shrimp and grits casserole, Dude, I sat up there for a hour and a half eating and taking a break,

But they had a bunch of food, like a 15ft table lined end to end.
I went back to the Shrimp and Grits Casserole 5x.
Freaking awesome. It was just missing the Gravy.
I might make it myself one of these days and eat on it all week.

My thoughts too: if someone asked me to bring a casserole, I would have declined and volunteered to bring pretty much anyth8ng else. I like the quiche idea.

Scratch cinnamon rolls, fruit salad, a gallon of bloody marys, anything but a casserole.

I’ve made this Spinach and Croissant casserole many times.

Ingredients
½ lb regular pork sausage
½ small onion or 1 large leek, diced
1 c. fresh spinach, roughly chopped
½ c. grated cheddar cheese
½ c. grated monterey jack cheese
3 large croissants, cut or torn into 1-2 inch cubes
6 large eggs
¾ c. whole milk
½ c. half and half
¾ tsp. dry mustard
½ tsp. salt
½ tsp. ground black pepper
¼ tsp. paprika
? tsp. garlic powder
Directions
In a large skillet, brown the sausage over medium heat until fully cooked. Transfer the sausage to a paper towel lined plate. Remove the grease by slightly patting with the paper towels, then place in a medium mixing bowl. Wipe the pan out a bit, then saute the onion until translucent, add the spinach and wilt. Add to the bowl with the sausage, then toss with the cheese and cubed croissants. Spread into the bottom of a 8x8-inch baking pan.
In a medium mixing bowl whisk together the eggs, milk, half and half, mustard, salt, black and pepper, paprika, and garlic powder. Pour over the mixture in the pan, taking care to soak the tops of all of the croissant pieces. Cover and refrigerate for at least 8 hours, preferably overnight.
Preheat the oven to 350 degrees. Bake uncovered for 45-50 minutes or until the center is set and the tops are golden brown. Remove from the oven and allow to rest for 10 minutes before serving.

I usually hate casseroles too, but they seem to work for breakfast/brunch.

I don't mind casseroles, but we serve breakfast burritos quite often and people scarf them up. You can make them ahead of time, wrap in foil and warm them up in the oven. Fill with whatever mixture you like. You can make them with basic egg, cheese, bacon or sausage or go with something like spinach, gruyere etc...

Another thing that ALWAYS gets eaten is deviled eggs. They're the first thing to go at parties/breakfast. They can also be designed with various ingredients. Not an entree, but filling and good.

The other benefit of a casserole in this situation is I can make it Friday night and just throw it in the oven Saturday morning, then just re-heat it a little when we get to party. There's going to be plenty of food from what it sounds like, so not real worried about not wowing anyone with something amazing. And pretty sure someone is bringing deviled eggs. Just wanted to maybe go a different route than the sausage, egg, and cheese varieties I've always had.

Yeah they are thinking of it as a regular casserole. All this is is breakfast foods mixed together and the eggs cook in between everything. More like a ln egg scramble on steroids.

Mine is just you brown the sausage/bacon or whatever. I like to do both if I can. Ham would be a good add in. Then cook the shredded hash browns until a bit brown. Mix all that shite up with cheese then put in the baking dish. Add the eggs and milk/cream and then cook in oven.

That's what I like about quiche. Make and bake the day before. Warm it in the oven just before serving. You could change out the ingredients as suggested. A good ham, spinach and gruyere would be tasty. I also like using prosciutto or pancetta and crisping some up to sprinkle on top is good, too.

We make the burritos the night before. Heat in the oven and put them in an ice chest to stay warm while you drive to wherever. They're individually wrapped in foil, so they stay hot.

Cook 4-6 servings of rice. Cook and crumble 1 or 2 pounds of country sausage, chop 1/2 cup of celery and sauté in a little butter until tender. Put rice in ovenproof casserole. Sprinkle celery and then sausage over top of rice in casserole. Dilute 1 can of cream of celery soup with milk and pour soup over mixture. It should be salty enough from the rice and sausage, but I like to add a little black pepper. Bake at 350 degrees F until the liquid bubbles (30 minutes). Serve then or cover in foil to keep warm.
















Everyone seems to like it when we make it for a breakfast crowd.
