Bread Storage

All my bread books say the same thing. Eat a freshly cooked loaf that day or store it in the freezer for several months. They never recommend storage in the refrigerator. Why is that? I usually keep my sourdough in a plastic bag in the refrigerator and slice it as I need it and toast it. The crust always comes out great and crispy.

I store mine at room temp in plastic bag. It lasts about 6 days before mold shows

That looks amazing! I can feel the roof of my mouth shredded after eating it but it looks delicious.

When bread goes stale, it not only dries out but the starches in the bread recrystallize. This happens much faster the colder it is…until you get to freezing. Once you drop below freezing, this process slows dramatically.

That’s why the fridge is actually worse than just out on the counter.

Thanks for the information and explanation. I still find that my sourdough lasts for weeks when kept in the refrigerator in a plastic bag and toasted as needed. Sandwich bread for sure stays fresh way longer in the refrigerator.

I may have to try an experiment the next time I make bread. I will leave one on the counter in a brown paper bag like they recommend and the other I will keep in the refrigerator and compare daily
