That might have been the case 25 plus years ago. They have a huge assortment of foods and can go from the crappy stuff to the high end things in just about every category. And just about every restaurant uses Sysco or a place like that for most things.

When I joke about a place being a sysco restaurant, I'm generally referring to them having almost nothing fresh and making nothing from scratch. Meaning no real skills in the kitchen needed.

For a meal including short rib mac & cheese, caesar salad, skirt steak, and a dessert you're looking at $60. With some of those items being enough for 2 people. Not sure that's "absurdly priced". Also not sure how people are "stunned" when they get the bill. Are you not ordering off of the menu? How are you surprised by the price?

$60 before tax and alcohol? Per person in a metry strip mall. It’s great for them bc people show up

You got 10oz of choice skirt steak for $29

Have you ever priced choice skirt from the wholesaler? Or even a grocer?

You can buy the creme de la creme American Wagyu outside skirt from Snake River Farms for $2.87/lb

$13 short rib Mac
$11 Caesar

Those dishes are dirt cheap to make, but I digress.

You people need to stay home and cook if you are going to start comparing meat prices to menu prices. Not going to give a business lesson here but you do realize the restaurant has overhead like the building, employees, etc? Right? It is incredibly ludicrous to compare the per pound meat price and apply some sort of retail markup and declare their price too high. No one is forcing you to go to at there.

What do you want them to price the skirt steak at $11.99? If you are the master of F&B pricing maybe you need to get out from behind that desk where you sit perusing P&L’s and make it big at your 25% margin restaurant chain.
