Boudin ratio rice to meat

I am halfway through making boudin for the first time. The meat mixture is in the fridge. Today I will be making the rice, mixing, and stuffing the casings.

I need help with rice and the ratio used. The rice ratio recipes are all over the place. How much rice per lb of meat?

Also, please give measurements for uncooked rice. Most recipes call for x amount of cooked. I have no idea how much uncooked rice makes cooked. Thanks

It's what you like best. Probably a 1/3 meat to 2/3 rice is an average blend

i just cook a decent amount of rice and start adding til it's where i want

1 cup of uncooked is around 3 cups cooked

Last batch I made it appears I did about 2 cups of cooked rice per lb of uncooked meat.

haha yea, right up the road! man when we moved up here i had to start making my own but i havent made any in a while. some of the shops in acadiana ship too

I use the 25-2-12 boudin cooking method. I season 25 lbs. of trimmed/cubed pork and 2 lbs. of liver (optional), which are slow cooked in large pot with onions and garlic. Once meat is cooked tender, it is strained, cooled, ground to desired texture, then mixed with 12 cups of cooked rice (1 cup raw yields 3 cups cooked), parsley and green onions. This makes around 40 lbs of boudin.

You saved the seasoned water that the meat was cooked in correct ? I use some of the seasoned water to cook the rice. I also add some of it to the boudin meat/rice mixture to keep moist when stuffing into casing. That leftover seasoned water has lots of flavor and spices. Best of luck as boudin is time consuming but worth the effort

Thanks! First time making and not that bad of a process so far. Now I am about to make the rice and mix. Yes I saved everything however, next time I will save some juice on the side and add to my rice to cook. I smothered down the pork until it fell apart and dumped it into larger pot and cooled in fridge.

Now I will half this, add half rice, mix, add green onions, mix, add additional rice and mix again. 1st time learning process. 2nd time will tweak everything.

So your ratio is .48 cups of cooked rice per lb of meat. Just looks weird in small increments. My 9 lb of meat with your ratio is 4.32 cups of cooked rice divide this by 3, gives me 1.44 cups of uncooked rice, Just seems off.

I think I will make more rice just incase.

So, I learned and failed at my first try in making Boudin sausage. Now I have a whole pot of unstuffed boudin.

Way too wet, threw meat and juice in pot did not strain was my issue. Flavor needs to be tweaked a title but, lesson learned for my first time. Until next time. However, my homemade Itlaian sausage came out fantastic!

Also, kitchen aid Mixer with attachment is not a good tool for stuffing Boudin.
