long story short, my Navy buddies and I get together one weekend a year and get hammered, smoke a bunch of meat and generally act like men. it's fun. this year is my turn.

i'm interested in getting some boudin noir, but i've never had it so i'm wondering what the flavor is like and what the best place to get it is? all of the gentlemen coming have had boudin before and love it but since this is a blood sausage i'm a little wary of jumping in and having some shipped without actually tasting it.

I've only had it when we've had a boucherie. I've never had it from a commercial vendor. the only way to describe the flavor is that it's very earthy and has a very pungent flavor. I wouldn't suggest serving the blood boudin alone. I would get a regular, a smoked and a blood boudin. Or cook a supper and have the blood boudin on the side.

You mention shipping--that might be the obstacle. Red boudin (boudin rouge is the more common name in S LA, as opposed to noir) has a short shelf life, much shorter than the regular stuff or smoked boudin. It isn't so hard to find, a number of places still make it...but whether any of the places that make it are also willing to ship is another matter. You're also talking about overnight shipping, which will drive up the cost significantly.

That said, I can recommend the red boudin from:
--Hebert's Slaughterhouse in Abbeville
--Bourgeois Meat Market in Schriever

So much misinformation floating out there regarding this traditional food. It is perfectly legal; but the por blood used to make it must be fresh (the frozen, coagulated stuff sold in buckets at Asian markets won't work)....so it survives mostly at smaller shops that also butcher animals on site. The vast majority of small Cajun meat markets buy already-processed hogs or merely meat & liver by the LB, so they have no blood with which to make it.

Bourgeois' will ship it. I haven't called to see what their shipping prices are but as you said i can't imagine it's cheap.

Bourgeois doesn't make it every day....just on certain days, and it often sells out early. So you might call and ask about availability, since you're trying to time this for a party.

When is your get together with friends and where do you live ? I live 15 min from Hebert’s in Abbeville and will eat blood boudin a few times per year. Very rich flavor and more filling than boudin blanc. I travel the State and can deliver it to you if needed. I would not recommend buying 20 lbs as the flavor is not for everyone. After 2 bites you will know if you like it or not

Best I’ve ever had — better than Bergerons and Babineaux Slaughterhouse (and it’s really not close, IMO) — is TJims in Cottonport. They have a smoked version that is awesome as well.

La Bon Boucon meat market in Vacherie normally has it. It's on the Westbank not that far from the Veterans Bridge in Gramercy. Call before you go to verify they have some.

it's the last weekend of April. I live in New Orleans so i guess regardless of where i get the stuff from I'm making a trip. i'm not looking for 20 lbs or anything. maybe 3 lbs so we can all try something new. these dudes are all from the northeast so i'd like to try to get something local.
