Bone-In Pork Shoulder in Baton Rouge

Any reccomendations on butcher shops that would have a 12-15lb with the skin and all?

It's commonly labeled as picnic ham. Just make sure it says "fresh" not cured or smoked.

Most any decent grocery store should have them this time of year.

The picnic isn't the shoulder. It's the thigh essentially.

basically any store should have them. I get mine at tom thumb so try albertsons there.

My point being you have a bone-in "pork shoulder" which is more commonly known as a boston butt.

And the picnic contains more than just the lower half of the "shoulder" it is also the upper portion of the foreleg.

OP, make sure you understand what you're wanting to order AND what they are giving you.

First the OP needs to know what bone he wants in his roast, shoulder blade he wants a butt, arm bone he wAnts picnic

As for skin on, I typically see this more so in the picnic, figure out what you want and any butcher can get it for you

I saw one at Rouse's (on Airline) Sunday. Had the skin on and was vacuum sealed. Labeled as pork shoulder. Don't recall the size but had to be over 10 lbs.

Are talking about a fresh ham? Most places have them. I stuff it with garlic and roast. Get that cracklin skin too.

No. I call a fresh ham the unprocessed ham from the hind leg. Most of the ones I see in stores are trimmed and smaller than the shoulder, though I'm sure you get them somewhere with skin on.

Y’all are mixing up 3 different cuts. The shoulder or butt is the upper portion of the front leg. It is generally what people use for smoking and braising. It has better muscle to fat structure to get the pull people are looking for. Just below that is your picnic. It similar to the butt, but not as tender. Still good to braise but not as good as the shoulder. The ham comes off the back leg. Can be braised, cured and smoked, roasted. Meat is more similar to the picnic. Any head to tail butcher should be able to provide these cuts with skin on or off. Iverstine’s on Perkins can do it. They carry Berkshire hogs which have excellent flavor.

Got one from Albertsons. Labeled as Fresh Ham. Looks like it's the same as the Picnic Shoulder.

20lbs with the skin.

Most likely it came from the rear legs if its labeled a ham.

The picnic comes from the front legs.

Yep...the shoulder is the butt/picnic together.
