My wife buys Motts Apple Juice by the gallon. I have 4 of them filled with water & frozen specifically for crawfish boils. They thaw relatively quickly. I use 2 per pot with frozen corn or 3 without. Boiled 3 sacks yesterday.... This gives u the ability to cool the pot a little without having to dump ice and dilute ur broth. I add ice on 3rd sack when bottles are thawed.
Big, dark, black/red basin crawfish take a little longer boil time than the smaller lighter pond raised bugs.
My typical boil consists of just keeping the fire on the pot after crawfiah go in, until a few bubbles begin to rise.... Then cut fire and soak. I have never returned the pot to a "rolling" boil after the basket went n w crawfish. Seems like that would definately overcook them

Drop in some cauliflower 5 min before you dump the bugs out. That stuff soaks up the seasonig like no other.

I've been putting ~12 frozen corns in with the soak to help cool, but I find they aren't seasoned and/or cooked enough. Any tips to help this other than obviously putting them in earlier (and not cooling).

Per sack of crawfish
1 6 pack of beer
1 sacksize seasoning (I prefer Louisiana brand over Zatarain's)
1 8-12 oz bottle of liquid boil
1 box salt
6 yellow onions
6 lemons
4 pods of garlic
2# sausage
6 corn (1/2 cob size)
3 pints mushrooms
3# of small red potatoes
Drink at least one beer gathering up all the stuff.
Open beer #2, Put onions (cut in half), garlic (cut in half), lemons (halved and squeezed), sack-seasoning, liquid boil, and 1/2-1 box of salt in water and bring to rolling boil.
Open beer #3, put in potatoes and, depending on size of potatoes, boil for about 5 min to start potatoes cooking
Open beer #4, put in crawfish.
As soon as water begins to boil again shut off gas (Open beer #5), put in sausage and let soak. Soak for total of about 20-25 min.
About 10-15min after you cut off the gas, open beer #6 and put in corn and mushrooms. (sooner if you want corn and mushrooms to be real spicy)
If you're boiling more than one sack, on the second time around don’t put any more salt and add about ½ - ¾ of sack seasoning – all other things remain the same, increase beer consumption by 2-4 beers
If you boil three sacks, on third sack dump water and start with clean water all over again, forget beer and start on whiskey.
Don’t forget squeeze butter for potatoes and corn

The crawfish float the same reason why fish float. They are cooked. They sink when they have cooled sufficiently that they contract enough to allow seasoned water into shell. Boil till they float (usually before they actually boil), and soak till they sink.
